For over 400 years, this island has been a land of fermentation, shaped by the enduring craft of soy sauce making. It is within this rich heritage that our brewery was born.
Inspired by the spirit of the island, we pursue a sake that expresses its unique character — from brewing with Shodoshima’s olive yeast to reviving abandoned rice fields through the cultivation of sake rice.
Surrounded by beautiful nature, deep history, and a singular culture, we continue our path with one purpose: to craft a sake that truly belongs to this island and is cherished by its people.
