Dear flavour seeker,
Some products are not born from a marketing exercise, but from plain common sense. From respect for raw materials and from making logical connections. And above all: the desire to create something genuinely good. This croquette is the result.
Three crafts came together: Omer Vander Ghinste, Mestdagh Artisan and farmer Olivier. What binds them is craftsmanship, flavour, and a strong belief in circular thinking.
From beer to beef, from beef to croquette.
When Omer beer is brewed, spent grain remains: a nutritious by-product of cereals. Not waste, but a valuable raw material. On farmer Olivier’s farm, this spent grain is used as feed for cattle, supplemented with locally grown crops.
Those cattle provide meat of outstanding quality: flavourful, honest, and with a story. That beef forms the basis of this croquette with character.
In the croquette, we use not only the beef, but also the Omer beer itself — the very beer from which the spent grain originally came. In this way, what started in the brewery becomes food again via the farm. Circular, logical and exceptionally tasty.
Artisanal croquette
The preparation is entrusted to Mestdagh Artisan, known for their uncompromising approach and craftsmanship, without artificial flavourings or unnecessary additives. The result is a powerful, full flavour with a delicate, crispy crust.
The two-bite meat croquette is initially offered in large packs for horeca and events. In time, a smaller retail pack will follow for those who want to serve a delicious bite at home — with a story to tell.
