Nojà produces artisanal pasta, flours and biscuits from ancient grains cultivated in the hills of Marche, in central Italy. The entire production follows a closed supply chain: the grains are grown, milled and transformed directly by the farm, ensuring full control over quality and authenticity.
Using traditional techniques such as bronze die extrusion and slow low-temperature drying, Nojà pasta preserves the natural aromas and nutritional properties of the grains. The same carefully selected flours are also used to craft rustic biscuits inspired by traditional Italian recipes.
Made from varieties such as spelt and Khorasan wheat, Nojà products offer distinctive flavour, excellent digestibility and a rustic character that reflects the agricultural heritage of the Marche region.
