O’Gustinos, Olivas Secas are not your typical table olives; they are a culinary product where time is the key ingredient.
Our Empletre olives are grown on our own terroirs in Bajo Aragón, Spain. They are only harvested in January when fully sun-ripened and naturally black. This long maturation process on the tree ensures a subtle concentration of aromas, a soft texture, and a delicious Mediterranean flavor.
After harvest, the olives undergo a meticulous artisanal process, resulting in a unique flavor profile.
They spend at least 9 months in saltwater before developing their full taste. Then they are washed and sorted, with only the finest olives selected by hand. A slow, low-temperature drying process follows, concentrating the flavors and giving the olives their characteristic wrinkled texture. Finally, a pasteurization step ensures preservation and stability without compromising taste.
Every step focuses on flavor, not speed.
