This wine with honey and walnuts is inspired by ancient rituals in which honey was mixed with wine or other beverages to celebrate the solstice. The pagan ritual of the Celtic peoples on June 21 is called “Litha,” which means “Fire,” and in its name they celebrated the night of the summer solstice.
This was the time to burn the old and celebrate the new, welcoming abundance, fertility, and renewal.
This ritual is still alive today, but under a different name, as on June 24, Christians celebrated “San Juan” by lighting bonfires to burn the old, renewing themselves from the past and sweetening wine (mulsum) to celebrate the good future.
Today, in Bullas and northwest Murcia, we continue to make traditional “walnut wine” on the shortest night of the year. This drink has accompanied us in moments of joy and celebration throughout history.
A few years ago, it was included in weddings and drunk during honeymoons. Today, it is still enjoyed with the typical Christmas and Easter gifts, as it is aged for six months, meaning it is made on June 24 and drunk on Christmas Eve.
