This is a recreation of an Edo-period sake brewed using Japan's oldest sake yeast (Saccharomyces sake) and rice. Its slightly sweet, rich, and complex flavor makes it a unique, meticulously crafted junmai sake. We hope you enjoy this bottle while imagining the scenes of Edo-period feasts where such sake was likely enjoyed. This sake goes well with any cuisine.
