For this product, we use a cut of beef called 'rump cap',
which is better known as 'Picanha'.
We first let the meat rest in a carefully selected brine
mixture. This provides the basis for deliciously tender
and juicy cold meat.
The meat is then rubbed with slightly sweet paprika.

This is a lightly smoked piece of sirloin steak that can be
